Ingredients
  

Cookie dough

  • cup unsalted butter just melted
  • cup packed dark brown sugar
  • 2 tablespoon granulated sugar
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • ¾ cup all-purpose flour
  • ¼ teaspoon baking soda
  • heaping ¼ teaspoon salt
  • ½ cup dark chocolate chips plus extra for topping

Brownie Batter

  • 5 oz bittersweet chocolate (70% cocoa), coarsely chopped
  • 6 tablespoon unsalted butter
  • 2 large eggs at room temperature
  • ¾ cup granulated sugar
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • cup all-purpose flour

Instructions
 

Preparation

  • Preheat oven to 350°F. Line an 8x8-inch square metal baking pan with parchment paper, leaving a 2-inch overhang at each side.
  • Make the cookie dough. Melt the butter and mix with brown sugar and granulated sugar. Add egg yolk and vanilla. Fold in flour, baking soda, salt, and chocolate chips.
  • Roll cookie dough into about 18 small balls, cover and refrigerate.
  • Make the brownie batter. Melt chocolate and butter together, then whisk with eggs, sugar, vanilla, and salt until pale. Fold in flour.
  • Scrape half of the brownie batter into prepared pan. Flatten half of the chilled dough balls and place over batter. Spread remaining brownie batter on top and place remaining dough balls on top.
  • Bake for 20 minutes, then reduce temperature to 325°F and bake for another 15-20 minutes until a skewer comes out with a few moist stick crumbs.

Notes

For best results, use a kitchen scale to weigh the ingredients. You can also bake in a 9x9-inch pan with slight adjustments to the layering process and baking time.
