Canned Goods
- 1 can (16 oz.) chili beans
- 1 can (15 oz.) black beans drained and rinsed
- 1 can (15 oz.) whole kernel corn drained
- 1 can (8 oz.) tomato sauce
- 2 cans (14.5 oz.) diced tomatoes with green chiles undrained
Seasoning
- 1.25 oz. taco seasoning package
Meat
- 3 whole skinless, boneless chicken breasts (about 1.5 to 2 lbs of chicken)
Preparation
Stir onion, beans, corn, tomato sauce, diced tomatoes, and taco seasoning into a slow cooker. Lay the chicken breast on top of the mixture, pressing down slightly. Set slow cooker to low heat, cover, and cook for 3-4 hours if thawed, or 4-5 hours if frozen.
Remove chicken breasts and shred. Stir back into the soup. Add water if desired.
Top with shredded cheese, sour cream, and crushed tortilla chips.
