Ingredients
  

Potatoes

  • 2 pounds petite yukon gold potatoes halved or quartered
  • 2 tablespoons olive oil
  • kosher salt
  • pepper

Turkey Filling

  • 1 pound lean ground turkey can substitute beef
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder

Toppings

  • quick pickled onions for topping
  • shredded lettuce for topping
  • chopped tomatoes for topping
  • sliced jalapeños for topping
  • crushed tortilla chips for topping
  • fresh cilantro for topping
  • lime wedges for spritzing

Instructions
 

Preparation

  • Preheat the oven to 425 degrees F.
  • Place the potatoes in a large bowl. Drizzle with olive oil and toss well to coat. Season with salt and pepper.
  • Spread potatoes on a baking sheet in a single layer. Roast for 25 minutes, flip and toss, and roast for another 15-20 minutes until golden and crisp. Optionally add cheddar cheese and return to oven for 5 minutes.
  • While the potatoes roast, make the ground turkey meat in a hot skillet without oil or with a teaspoon of olive oil if needed.
  • Add ground turkey, breaking apart with a spoon. Cook until browned. Stir in cumin, paprika, garlic powder, chili powder, and season with salt and pepper.
  • If desired, make a slurry with ½ cup cold water or broth and 1 ½ tablespoons flour. Slowly add to the turkey while stirring. Cook on low for 10 minutes.
  • To build the bowl, layer potatoes on the bottom, followed by cheese and ground turkey, and then all toppings. Spritz with lime and enjoy!

Notes

You can customize with your favorite toppings and choose to make the turkey saucy or not based on preference.
