Ingredients
  

Quiche

  • 1 pie crust store bought or favorite recipe link to recipe
  • 5 large eggs
  • ¾ cups heavy cream
  • ½ cup milk read notes
  • ¼ teaspoon salt link to salt
  • ¼ teaspoon pepper
  • 6 ounces canadian bacon diced

Blender Hollandaise Sauce

  • ½ cup unsalted butter
  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt link to salt
  • teaspoon cayenne pepper

Instructions
 

Preparation

  • Preheat oven to 350℉ degrees. Roll pie crust out and fit into 9 inch pie dish. Trim any excess crust and flute the edges.
  • Line the inside of the pie crust with parchment paper and fill with pie weights or beans. Bake the crust for about 20 minutes, then remove the weights and bake for another 10 minutes.
  • Prepare the egg mixture by adding eggs to a measuring cup. Add cream and milk to total 2.5 cups. Add salt and pepper.
  • Mix with a hand mixer until light. Let sit if frothy.
  • Spread diced canadian bacon in the crust and pour the egg mixture on top. Bake for 45-50 minutes until slightly wobbly in the center.
  • Allow to cool for about 20 minutes before serving.

Blender Hollandaise

  • Add butter to a small saucepan and heat.
  • While butter melts, add egg yolks, lemon juice, salt, and cayenne to blender.
  • Once butter is just melted, remove from heat.
  • Blend the egg mixture and drizzle in hot butter while blending.
  • Blend for an additional 10-15 seconds. Adjust thickness and seasoning if desired.
  • Serve hollandaise sauce over slices of quiche.

Notes

Quiche can be served warm, cold, or at room temperature.
