Apple Cider Vinaigrette
- 6 tablespoons oil (canola or vegetable)
- 2 tablespoons apple cider vinegar
- 1 tablespoon water
- 1 tablespoon Dijon mustard
- 1 tablespoon sugar
- salt to taste
- black pepper to taste
Honeycrisp Harvest Salad
- 1 head romaine lettuce
- 1 large Honeycrisp apple
- bacon pieces
- dried cranberries
- bleu cheese crumbles
- pecan halves
Honeycrisp Apple Salad
Chop the lettuce, then rinse and dry.
Peel the apple and cut into bite-size pieces.
Place the chopped lettuce in a large bowl with a lid. Pour half of the dressing over the lettuce. Place the lid on the bowl, and shake to toss. Divide the lettuce between four individual bowls.
Top the lettuce with the chopped apple, bleu cheese, dried cranberries, crumbled bacon, and pecans. Drizzle the remaining dressing over the salad. Serve.
