Meatloaf Ingredients
- 1.5 cups crushed buttery crackers (such as Ritz)
- ⅔ cup evaporated milk
- 1.5 tablespoon Worcestershire sauce
- 2 teaspoon kosher salt
- ½ teaspoon black pepper
- 2 large eggs
- 2 cloves garlic (grated on a Microplane)
- 1 medium sweet onion (7 oz., grated on the large holes of a box grater)
- 2 lb 85% lean ground beef
- ⅔ cup ketchup
- 3 tablespoon pepper jelly

Cooking Instructions
Preheat oven to 350°F. Line a sheet pan with foil; coat foil with cooking spray.
Stir together cracker crumbs, evaporated milk, Worcestershire, salt, pepper, eggs, garlic, and onion in a large bowl. Add beef to bowl; mix well (with hands) to combine. Turn beef mixture out onto prepared pan and shape into a 9 x 4-inch freeform loaf.
Bake at 350°F for 35 minutes. Meanwhile, whisk together ketchup and pepper jelly in a medium bowl.
Remove meatloaf from oven (leave oven on). At this point, you can pat away drippings and cooked proteins from around the meatloaf. Spread ketchup mixture over meatloaf and return to oven.
Bake until a thermometer inserted in center registers 165°F, about 30 minutes. Remove meatloaf from oven and let stand for 5 minutes. Cut into 12 slices.
