Plantains

  • 2 overly ripe black plantains, peeled and sliced into 1-inch pieces
  • 4 tablespoons butter or oil
  • Salt optional garnish

Cooking Instructions

  • In a non-stick skillet over medium heat, melt butter.
  • Add plantains in a single layer and cook on each side for about 2-3 minutes until caramelized brown.
  • Transfer to a plate covered with newspaper or paper towels to drain for a minute or two, then serve.

Notes

A pinch of salt enhances the flavors. Store leftovers in an airtight container for up to 5 days. Reheat in a skillet, microwave, or oven until warmed through.
