  • 2 cups cherry tomatoes halved
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 cups vegetable broth

Cheesy Topping

  • 1 cup shredded cheese mozzarella or cheddar
  • 4 slices bread cubed

  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon olive oil

Instructions
 

Soup Preparation

  • Preheat the oven to 400°F (200°C).
  • In a saucepan, heat olive oil and sauté onions and garlic until translucent.
  • Add the cherry tomatoes and cook for about 10 minutes until they soften.
  • Pour in the vegetable broth and bring to a boil, then simmer for 15 minutes.
  • Blend the soup until smooth and season with salt and pepper to taste.

Cheesy Croutons

  • Toss the bread cubes with olive oil and cheese.
  • Spread them on a baking sheet and bake for 10 minutes until golden brown.
  • Serve the soup hot topped with cheesy croutons.

You can use any kind of tomatoes for this recipe, and feel free to experiment with different types of cheese for the topping.
