Base Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil or use oil from sun-dried tomatoes
  • 4 pieces salmon fillet
  • salt
  • pepper
  • 2 cloves garlic minced
  • 3-4 pieces sun-dried tomatoes packed in oil, sliced
  • 125 ml dry white wine
  • 250 ml double/heavy cream
  • 50 g Parmesan cheese grated
  • 30 g fresh spinach chopped

  • Pat the salmon dry with a paper towel, season with salt and pepper. Heat olive oil and butter in a frying pan, then sear the salmon over medium high heat for 6-7 minutes until golden and crispy skin side up. Remove salmon to a plate.
  • Add minced garlic and sliced sun-dried tomatoes to the pan, sauté for 30 seconds on low heat, then deglaze with white wine and simmer for 5 minutes, reducing liquid by half.
  • Add heavy cream and grated Parmesan cheese, stir until incorporated, then add chopped spinach and return salmon into the pan. Simmer for 5 minutes and season sauce with salt to taste.

Notes

Pat salmon dry to avoid steaming and ensure proper sear. Use fresh grated Parmesan for better flavor and texture. Substitute with kale or arugula if preferred.
