Ingredients
  

  • 1 ½ cups mashed ripe bananas (~3 bananas)
  • cup melted coconut oil or melted butter
  • ¾ cup dark muscovado or dark brown sugar
  • ¼ cup full-fat coconut milk or yogurt, or sour cream
  • 2 large eggs lightly beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • ¾ teaspoon baking soda
  • ½ teaspoon fine grain sea salt

Instructions
 

Preheat and Prepare

  • Preheat the oven to 350°F, and place a rack in the center. Oil a 9-by 5-inch loaf pan.

Make the Batter

  • Place the mashed bananas in a large bowl. Stir in the coconut oil, then add the brown sugar and coconut milk. Add the eggs and vanilla; stir until well combined. Add the flours, baking soda, and salt, mixing just until combined.

Bake and Cool

  • Pour the batter into the prepared pan and bake until golden brown, about 50 minutes. Cool in the pan for 10 minutes, then turn out to cool completely. Slice, and enjoy!

Notes

This banana bread can be made with various substitutions for coconut oil and milk as preferred.
